Amaranthus hybridus ''Hopi Red Dye’ 

Originally from the Continental U.S., but also found in parts of Canada and Hawaii, amaranth has both medicinal and culinary uses in multiple Indigenous cultures. The Havasupai Tribe of the Grand Canyon use the grounded plant to make soups, breads, and porridges. Western Keres-speaking Peoples in present-day New Mexico (the Pueblo of Acoma and the Pueblo of Laguna) use the plant as a gastrointestinal aid as well as dry it for winter consumption.
