Finely ground seeds and pods are a favorite seasoning in the cuisine of Georgia, a Caucasian country located on the Black Sea. In Germany, the ground leaves and flowers are used to season bread and in Switzerland to flavor sap sago cheese.

Slender annual to 60cm. Leaflets ovate or round near base, toothed; stipules lanceolate, toothed at base. Flowers blue and white in dense, long-stalked, globose heads. Fruits thombic-ovate, long beaked.
